Ingredients
10 dates
1/2 cup shredded coconut
Fruit - bananas, kiwis, blueberries or any other fruit you desire.
Instructions
In a food processor mix dates and shredded coconut together until you get sticky pastry. Take a small bowl or plastic/glass container and lay down one layer of banana slices with covering the sides as well. Take about 2/3 of date-coconut mixture and press on top of that. Now start layering the fruit inside - blueberries, kiwis, bananas or any other fruit. Now cover all of it with remaining 1/3 of date-coconut mixture. Place in the fridge for few hours or overnight. When taking out of the container carefully loosen the edges with a knife and turn the cake upside down on the plate.

Raw Chocolate Truffles
- 3 cups soaked Almonds
- 15 Medjool Dates
- 8 Strawberries
- 6 tablespoons Carob powder
Blend ingredients in a Cuisinart until thick paste or chop finely. Roll into balls and then roll in hemp seeds, coconut flakes, or chopped nuts.

Raw Vegan Apple Strudel
- 1 apple
- 3 bananas
- 12 dates
Take the dates, half a banana and a little grated apple, BLEND until thick and pasty in a blender or cuisinart (not runny). Don’t add water unless you have to get the blender moving. Put paste aside.
Cut a banana in half then cut in thin slices lengthways (for layers).
Cut/mandoline apple slices very thinly for layers.
Layer down slices of banana then a layer of apples followed by a layer of BAD (banana, apple, date) paste. Repeat.

Raw Vegan “Cereal”
- Sliced Banana
- Handful Blueberries or Strawberries
- Raw Almond Milk
- 1 Mango cubed (optional)

- 2 cups almond or brazil nut milk
- 1 banana
- 3 pitted dates
- 2 tablespoons carob powder
- 1 tablespoon maca
Blend all ingredients until smooth.

Basic Green Smoothie (these are what got me into raw food)
- Water from 1 Coconut or 1 cup spring Water
- 1 Fuji Apple
- 3 pitted Dates
- 4 Bananas
- 2 handfuls baby Spinach (or any of your favorite greens)
Blend all ingredients until smooth.
