Savory Mexican Salad with Guacamole
This raw meal never fails to satisfy! It’s not only delicious but it’s also a nutritional powerhouse.
Salad Ingredients
½ Bunch Romaine Lettuce chopped
½ Bunch Lacinato Kale de-stemmed and chopped
Cucumber slices
Mixed Baby Greens
Sprouts
Salsa:
2 Heirloom Tomatoes
1 Red Bell Pepper
1 Stalk Celery
Handful Cilantro
¼ Onion
½ Lemon juiced
Dash of Cayenne
Directions: Chop and mix all ingredients in a large bowl or add to a food processor.
 Guacamole:
2 Avocados
Handful Cilantro
1 Clove Garlic
½ Lemon juiced
Directions: Chop and mix all ingredients in a large bowl or add to a food processor.

Everything Springtime Salad
1 head of Romain lettuce (or other green leafy vegetables) - chopped finely
1 large apple, such as Fuji or Gala - cored and shredded on the large-holed side of a box grater
1-2 carrots - peeled and finely shredded
1-2 small cucumbers - peeled, optionally seeded and finely chopped
1-2 tomatoes - finely chopped
1 pear - cored, finely chopped
2 ripe kiwi - peeled and chopped
handful of strawberries - finely chopped
handful of radishes - finely chopped
1 ripe mango - peeled, pitted and finely chopped
Other Options:Parsley, dill, basil, mint, radicchio, celery, salad turnips, rutabaga, celery root, blueberries, starfruit, peas, green beans, edamame.
Place all the ingredients in a large bowl, toss gently, and enjoy the flavors of spring!
Epic Raw Vegan Salad Dressing

This recipe is a favorite of mine! A delicious and healthy dressing to mix with your large dinner bowl of greens and veggies. This can also be eaten as a soup. 

Ingredients:

  • 2 Navel Oranges Peeled
  • 1 Lemon Juiced
  • 3 Stalks Celery
  • 1/4 Onion
  • Thumb of Ginger Peeled
  • 1 Avocado
  • Handful Cilantro
  • Handful Basil
  • 1 Red Bell Pepper
  • 1/2 Teaspoon Cayenne

Directions:

Using a high speed blender, place the peeled oranges in first and then add the rest of the ingredients. Blend until smooth. Pour into your large bowl of greens and veggies and enjoy the abundance of living foods!

Banana Blueberry Spinach Smoothie (Great Breakfast!)
7 Spotty Ripe Bananas
5 Medjool Dates Pitted
1 Cup Fresh or Frozen Blueberries
2 Handfuls Baby Spinach
2 Cups Water
Blend all ingredients in a high speed blender until smooth.

Low Fat Ingredients:
3-4 Cartons Cherry/Grape Tomatoes
Stems of Swiss Chard
1 Bunch Cilantro
Fresh Basil
Fresh Thyme
Fresh Oregano
1 Beet
Dash of Cinnamon
5-6 Large Zucchinis
Spiralize the zucchinis into pasta using a spiralizer. Blend all other ingredients in a high speed blender, pour over the pasta, and say MAMMA MIA!
FullyRaw Love Bites
Get ready for a BITE of LOVE! Indulge in this decadent, delicious, and divine fat-free/nut-free dessert! Show that body of yours some LOVE!

Ingredients:
2-3 Cups of fresh, pitted dates
2-3 Cups of raw, dehydrated figs
1-2 Cups of fresh strawberries
Handful of raspberries and blackberries
1-2 Tablespoons of raw carob
1-2 Tablespoons of cinnamon
1 Teaspoon of ginger (dried or fresh)
Meat of 1-2 young coconuts
Directions:
This recipe will be completed in approximately five layers with 2 kitchen machines: a food processor and a blender. I prefer the Vitamix blender sold on our ROC website.
For layer one, place about 1 pound of dates (approx. 30) with about 15 dehydrated figs. Add in some carob and cinnamon and process until it reaches a fudge-like consistency. Press this “fudge” into a plate or serving dish.
For layer 2, thinly slice strawberries and layer them on top of this “fudge.”
For layer 3, create the same “fudge” as layer one, but process it a bit more so that it is a little more sticky. Later this on top of the strawberries when ready. Stick your giant “love chunk” in the freezer while you make the next layer to harden it up a bit.
For layer 4, blend the rest of your strawberries with the meat of 1 young coconut and perhaps a date with a sprinkle of cinnamon. Take your other 3 layers out of the freezer and then spread this Coconut Cream on top! 
For the 5th and final step, FIRST slice your LOVE CHUNK into tiny LOVE BITES. Wet your knife to keep it from getting too sticky. After you have sliced your bites, place slices of raspberries or blackberries on top!
Admire your gorgeous creation then take a BITE OF LOVE!

Raw Vegan Blueberry Pie It’s so easy to make in just 2 easy steps! In order to make this recipe, you will need a high speed blender as well as a food processor and a pie dish. Ingredients for the Crust:
1.5 Cups of Pecans
25 Fresh, Wet Medjool Dates
1 Teaspoon Cinnamon
Directions for the Crust: Process ingredients in a food processor until they reach a crust-like consistency. Press the crust into your pie pan. Ingredients for the Blueberry Pie Filling:
1 Orange peeled
1 Cup Fresh or Frozen Blueberries
2 Ripe Bananas
25 Fresh, Wet Medjool Dates
1 Teaspoon Cinnamon
Directions for the Filling: First add orange in blender, then add frozen blueberries, 2 ripe bananas, 25 dates, and 1 teaspoon of cinnamon. Blend until smooth and pour the filling into the crust and spread it in evenly. Freeze the pie for about an hour until it firms up. Serve chilled! Enjoy and share with family and friends!
